Coconut Butter Fruit Pops

Happy Resurrection Day! We really want to keep it that way. Celebrations can be tricky. Between friends and family that really only wants to bless you and your own desire to have an excuse to eat the things you crave, celebrations can be the most difficult, emotionally charged times of the year at best. At worst, if you have a known health condition that your diet is addressing, you could have a very uncomfortable end to a once wonderful day. Give everyone that will want to buy you or your children a gift a recommendation list or a no-edibles rule. Be understanding and sweet, but firm in your resolution. Don’t expect them to be perfect in their understanding of your issues. That is why it is so important to give specific brands of items. If you receive something that is not on your list, but it seems to have good ingredients, don’t feel bad about double checking. This is particularly true if you really do have symptoms which are managed with diet. Here are is a wonderful recipe to help you enjoy your celebration without uncomfortable side effects.

Coconut Butter Fruit Pops

  • 4 c unsweetened coconut
  • 1 bag freeze-dried fruit (1.2 – 2.46 oz)
  • 7 drops plain stevia

Blend the coconut into coconut butter. A vitamix or a high powered food processor will blend the coconut into butter. You can buy coconut butter if you don’t have a processor for this. Blend the bag of freeze dried fruit and stevia into the coconut butter. It will cool the butter a little and harden. Keep blending, and it will become the optimal viscosity. Place in a candy mold. Refrigerate until solid. When hard, pop out of the mold and trim any edges. Store in the refrigerator.

There are many flavors. Trader Joe’s has apple, blueberry, banana, mango, and strawberry freeze dried fruit.

The blueberry is by far the lowest in carbohydrates. You will need twice the stevia for this flavor. It is one of my favorites.
